Homemade pasta

What you will need.

2 cups All purpose flour or semolina flour
3 eggs at room temp
1 egg yolk
pinch of salt
olive oil ( EVOO)/ Butter

How to.

  1. In a bowl or on a surface, measure out the flour and make a well in the centre of the flour .
  2. Beat the eggs and pour them in the well. Start incorporating the flour from inside working your way to the outside.
  3. The dough will appears chunky with some parts that are still loose. Knead the dough for 10 mins until you get the dough to an elastic consistency. ( DO NOT be tempted to adjust the flour or the eggs.)
  4. With a rolling pin, roll out the dough to paper thin size or the desired thickness and cut them to individuals noodles or circles if making ravioli pasta.
  5. Enjoy your pasta anyway you like. We did it the classic way. ..cacio e pepe. Just make a sauce out of butter, some garlic salt and pepper. Enjoy.
