Chicken Kung Pao (takeout Chinese)

What you will need:

½ kg chicken breast cut into cubes
1 ½ cup  corn flour/starch
3 eggs beaten
1/4 cup canola oil
1/4 cup soy sauce
1/4 cup vinegar
1 tbsp Sriracha sauce
6 cloves of minced garlic
1 red chopped onion
1 red chopped red pepper
1/4 cup peanuts or cashews
green onions for garnish

How to:

  1. Season the chicken with salt and pepper. Coat it with corn flour evenly and then in a separate bowl beat the eggs together . give the chicken cubes a good bath in the eggs wash to ensure they are evenly coated.
  2. On a saucepan, heat up the canola oil and fry the chicken cube right from the egg wash. Let them fry till they are golden brown.
  3. In a separate bowl, mix the soy sauce, Sriracha sauce, minced garlic in a bowl and then pour them onto the chicken in the skillet.
  4. Add the red peppers and the peanuts to the skillet and let them simmer for 20 minutes till cooked through.
  5. Serve with steamed rice or egg noodles and enjoy.
