Chicken Kung Pao (takeout Chinese)
What you will need:
½ kg chicken breast cut into cubes
1 ½ cup corn flour/starch
3 eggs beaten
1/4 cup canola oil
1/4 cup soy sauce
1/4 cup vinegar
1 tbsp Sriracha sauce
6 cloves of minced garlic
1 red chopped onion
1 red chopped red pepper
1/4 cup peanuts or cashews
green onions for garnish
How to:
- Season the chicken with salt and pepper. Coat it with corn flour evenly and then in a separate bowl beat the eggs together . give the chicken cubes a good bath in the eggs wash to ensure they are evenly coated.
- On a saucepan, heat up the canola oil and fry the chicken cube right from the egg wash. Let them fry till they are golden brown.
- In a separate bowl, mix the soy sauce, Sriracha sauce, minced garlic in a bowl and then pour them onto the chicken in the skillet.
- Add the red peppers and the peanuts to the skillet and let them simmer for 20 minutes till cooked through.
- Serve with steamed rice or egg noodles and enjoy.
