Cinnamon Snickerdoodle cookies
What you will need:
3/4 cup brown sugar
1/2 cup granulated sugar
1 cup unsalted butter (room temp)
2 eggs
vanilla essence
1 tbsp baking soda
1 tbsp cream of tartar
3/4 tspn salt
1 tspn ground cinnamon
3 cups all purpose flour
For coating
1/4 cup sugar
2 tbspn cinnamon
How to:
- In a large bowl or stand mixer cream together the butter , granulated sugar and the brown sugar until fully incorporated, for about You want to have a creamy consistency.
- Add the egg and the egg yolk and mix in. Then add the vanilla essence.
- In a separate bowl measure out the dry ingredients remaining and mix them fully. Then add them to the wet ingredients t and mix just until the come together. DO NOT OVERMIX .
- Scoop out 1 tspn of the dough and make balls . place them on a baking tray. In a small bowl mix in the sugar and the cinnamon and then take the balls and rolls them over the mixture till covered.
- Place them back to the baking tray spacing them out a distance of 5 cm apart. Bake them in an 170 degree oven for 8 – 10 min.
