Cinnamon Snickerdoodle cookies

What you will need:

3/4 cup brown sugar
1/2 cup granulated sugar
1 cup unsalted butter (room temp)
2 eggs
vanilla essence
1 tbsp baking soda
1 tbsp cream of tartar
3/4  tspn salt
1 tspn ground cinnamon
3 cups all purpose flour

For coating
1/4 cup sugar
2 tbspn cinnamon

How to:

  1. In a large bowl or stand mixer cream together the butter , granulated sugar and the brown sugar until fully incorporated, for about You want to have a creamy consistency.
  2. Add the egg and the egg yolk and mix in. Then add the vanilla essence.
  3. In a separate bowl measure out the dry ingredients remaining and mix them fully. Then add them to the wet ingredients t and mix just until the come together. DO NOT OVERMIX .
  4. Scoop out 1 tspn of the dough and make balls . place them on a baking tray. In a small bowl mix in the sugar and the cinnamon and then take the balls and rolls them over the mixture till covered.
  5. Place them back to the baking tray spacing them out a distance of 5 cm apart. Bake them in an 170 degree oven for 8 – 10 min.
